About this Course
This course introduces the basic principles of food hygiene and sanitation applied in the food preparation and service establishment. This course focuses on the basic understanding of food microbiology, the importance of sanitation during food flow, pest management and Malaysian Food Regulation and Food Act. The materials offered in this course will be able to help the students to understand the importance of safe practices for food handling and personal hygiene to prevent the food borne illness. It also emphasizes on awareness of food safety issues in the food industry.
Course Learning Outcomes
1) Identify hazards that can cause foodborne illness and waste to reduce risk contamination.
2) Respond to food safety hygiene and sanitation practices to ensure the safety of food.
3) Demonstrate teamwork skills in constructing the safety system in foodservice operation.
